In the heart of Beaune, "La Moutarderie Fallot," the last independent family mustard maker in Burgundy, continues a legacy of exceptional mustard production. Since 1840, their traditional methods, notably the crushing of seeds with a millstone, have preserved the full flavor of their mustard blends.
Burgundy Mustard
Over centuries, Dijon mustard has earned its reputation through the quality of mustard seeds and the use of verjuice, both native to the region. Although Burgundy lost the geographical exclusivity for Dijon mustard, now only a process name, Edmond Fallot draws inspiration from traditional recipes to craft their genuine “Burgundy mustard.” This mustard, made exclusively in Burgundy with locally grown seeds and Burgundy white wine "aligoté," has been recognized as a Protected Geographical Indication (PGI) since 2009.
The Company
La Moutarderie Fallot has stood as an independent Burgundy family business since 1840. Combining modern industrial capability with artisanal know-how, they prioritize environmental protection through waste sorting and effluent processing. Currently led by Marc Désarménien, the grandson of founder Edmond Fallot, the company’s twenty employees are all dedicated to maintaining product quality.
Their Ambition
Deeply rooted in the Burgundy region and its cultural heritage, La Moutarderie Fallot is committed to reviving mustard seed cultivation in Burgundy, working alongside other mustard industry professionals.
Flavours
La Moutarderie Fallot, much like top-class chefs, excels in blending different flavors and tastes. The balance and delicacy in their mustards come from using authentic, high-quality ingredients. These include tarragon from France, honey and balsamic vinegar from Modena, Pinot noir from Burgundy, Espelette pepper, and green peppercorn from Madagascar.
